Description

Xanthan Gum, also known as yellow gum and Han seong gum, is a high molecular weight, anionic polysaccharide polymer produced by fermentation of Xanthomonas campestris with starch as the main raw material. It is soluble in cold water and hot water, insoluble in general organic solvents, and has high viscosity, high acid and alkali resistance, salt resistance and high heat stability. Xanthan gum, known as “industrial monosodium glutamate”, is a microbial polysaccharide with a large scale of production and a wide range of uses in the world, and is one of the most excellent biological gums known at present. Xanthan gum is widely used in various fields of national economy as emulsifier, suspending agent, thickening agent, adhesive, stabilizer, gel thickening agent, sizing agent, film forming agent, etc.
