Tamarind Gum is a kind of neutral polysaccharide, which is extracted from the  endosperm of the leguminous Tamarind (also known as tamarind). It is a reddish brown, gray white to white powder, odorless, easily to disperse in cold water, and form a viscous liquid when heated. Its water solution has strong viscosity, and its viscosity is not affected by acids and salts, so It is widely used as edible gum.
